Winemaking

Cold-soak for maximum colour extraction took place over 48 hours. Fermentation was carried out between 22 and 24 degrees Celsius, a range that preserves fruit character while building structure.

A small portion completed malolactic fermentation and ageing in barrels to add complexity and roundness to the final blend. The wine was then rested and integrated before the final assemblage.

The final blend was aged for 4 months with staves (40% French and 60% American Oak), imparting subtle vanilla and spice notes to complement the wine's natural character.
