The Lavo Chenin Blanc is a light, fresh and crisp white wine from Wellington, Western Cape. This Chenin Blanc pairs beautifully with shellfish, pork, ham and salads with vinaigrettes. A light, fresh and crisp white wine. Naturally versatile and approachable, it can also tame the heat of spicy dishes with effortless elegance.

Winemaking

Machine harvested grapes are pressed and cleared in settling tanks over 48 hours. All work is done as reductively as possible to preserve the natural freshness and delicate fruit character of the Chenin Blanc variety.

The juice is racked with a little of the fermentation lees to the fermentation tank, where fermentation takes place at around 16°C, a cool temperature that keeps the wine vibrant and aromatic.

After fermentation, the wine is pumped off the thick lees and stored on thin lees with periodic mixing every two weeks. This gentle lees contact adds texture and subtle complexity to the wine's clean, crisp profile.
